Grouse Soup is a delicacy with high fame at home and abroad. A folk saying in North China claims that the most delicious meat in the sky is grouse and the most tasty meat on the earth is donkey. Tourists to North China would regret it if they can’t have a taste of the Grouse Soup and the bear’s paw (another specialty in North China). Now, dishes made of Grouse are used on top-level state banquet tables. The soup features clean soup , tender meat, savoury taste and rich nutrition .
Ingredients:a grouse (750g),steeped black mushrooms 50g, 1 egg, fresh bamboo shoot slices 25g, ham slices25g, salt 2g, Shaoxing rice wine 15g, MSG 2.5g, vegetables 30g, chicken broth 750g, some wet cornstarch and cooked lard .
Preparation:
1. Process the grouse and remove the viscera . Wash clean and remove bones. Cut the meat into small slices and put into a bowl , add salt , rice wine , egg white , cornstarch , and blend , Scald in boiling water for seconds , Take out and drain off water . Cut mushroom into slices.
2. Please the grouse skeleton in a big bowl. Add chicken broth and steam for 20 minutes. Scald mushroom , bamboo shoots and vegetables in boiling water for seconds and take out .
3. Put in work grouse bone soup 500g and fresh water 250g and heat to boil . Add grouse meat , bamboo shoot , mushroom , green vegetables , salt and rice wine . Bring it to a boil and remove dross. Then transfer to a soup bowl . Add some MSG and cooked lard . Then serve.
